Ingredients:

1 pkg of the Bartolo Ballerine with tomato

Olive Oil to taste

Grated parmigiano cheese

Grated pine nuts (optional)

Chopped basil (optional)

Grated black pepper (optional)

Fresh chopped tomato (optional)

Pitted black olives (optional)


This is a simple recipe designed to ensure that one can taste the flavors in the pasta. Simply boil the pasta (according to the directions on the pkg, don't forget to salt the pasta water) and then dress with the olive oil and parmigiano cheese. Add the basil, pine nuts, black pepper, tomato and olives as desired but not necessary. This dish if made 1/2 hour ahead and refrigerated makes a great summer cold salad. The Pasta di Bartolo people suggested that we have it that way. The garlic and red peppers in the picture are for photography purposes only.
