Valentine's Popcorn Snack Mix

Ingredients

2 - 4 cups plain popped corn


Directions

Line a sheet pan with parchment paper. Spread the yogurt pretzels in a single layer on the baking sheet, placing them close together and drizzled sides up. Top with the shortbread bites and spread those evenly around and between the pretzels.

 

Melt the ruby chocolate in a microwave safe bowl in 30 second bursts, stirring well after each interval and stopping once the chocolate is 80 – 90% melted (the residual heat will melt the rest as you stir; overheating can cause the chocolate to seize up). Transfer the melted chocolate to a pastry or Ziploc bag/piping bag and snip a small opening in the corner. Drizzle over the pretzels and shortbread. Pour the popped corn over the melted chocolate and gently spread into an even layer. Press lightly to adhere.

 

Melt the white chocolate in a microwave safe bowl in 30 second bursts. Transfer the melted chocolate to a pastry or Ziploc bag and snip a small opening in the corner. Drizzle over the popcorn. Sprinkle the candy quins over the top and let set completely at room temperature. Break into chunks and serve.

 

Note: You can use store bought popcorn or pop your own. Place 1/4 cup popcorn kernels into a paper bag and fold over a few times to close. Place the bag on its side into your microwave and cook till popping slows to 1 – 2 second intervals. Transfer to a bowl and remove any unpopped kernels before using.
