Pumpkin Bites

Ingredients

For the Pumpkin Cake:

1/4 cup neutral oil

1/2 cup milk

2 large eggs

 

For the Frosting:

10 tbsp unsalted butter, at room temperature

3 tbsp milk

Orange Sanding Sugar


Directions

Pre-heat the oven to 325 degrees; grease and line a 9” round baking pan. Follow baking and frosting mix instructions. To shape into pumpkin bites, line a baking sheet with parchment paper and pour the sugar into a small bowl. In a large bowl use your hands to crumble the cake. Add 1 cup of the frosting and combine. If it’s still too crumbly, add the rest of the frosting, 1/4 cup at a time. Using cookie scoop or tbsp, scoop the mixture onto your prepared baking sheet. Use your hands to roll the mounds into balls, then roll each ball in the sanding sugar. Use a toothpick to create “ribs” around each bite. Gently press a chocolate chip into the top of each bite and refrigerate till ready to serve.
