Peppermint White Chocolate Mousse Cups

Ingredients
8 oz OliveNation White Chocolate Chips, divided
OliveNation Crushed Peppermint Candy Topping
1 cup well chilled heavy cream
Directions
Assemble 6 small ramekins or glasses. Place 2 ounces (about one-fourth) of the white chocolate chips in a small glass bowl and place the rest in a medium glass bowl. Melt the chips in the microwave, stirring well every 30 seconds. Let cool slightly. Place the crushed peppermint into a shallow dish.
Working with one ramekin at a time, dip the top edge into the bowl containing the 2 ounces of melted white chocolate, then dip immediately into the dish containing the crushed peppermint. Repeat with the remaining ramekins and place in the fridge while you make the mousse.
Whip the chilled cream till soft peaks form. Fold one-fourth of the whipped cream into the bowl containing the 6 ounces of melted white chocolate and fold well. Add the remaining whipped cream in 2 – 3 additions, folding well each time.
Divide the mousse evenly between the 6 ramekins and chill to set, 30 – 60 minutes (can be made 4 – 6 hours in advance). Just before serving, garnish with mini marshmallows and more crushed peppermint.
