No-Bake Cranberry Pistachio Bars

Ingredients

1 1/2 cups rolled oats

1/2 cup peanut butter (any nut or seed butter may be substituted)

1/3 cup maple syrup

2 tablespoons OliveNation White Chocolate Chips, melted


Directions

Line an 8 x 4 loaf pan with parchment paper, leaving an overhang on all sides. In a medium bowl combine the oats, peanut butter, maple syrup and brown sugar extract. Press half the mixture into your prepared pan. Sprinkle the cranberries and pistachios over the mixture in the pan. Dollop the remaining mixture over and use a small angled spatula to press in evenly. Chill till firm, 60 minutes (can be done overnight). Use your parchment sling to remove the bar from the pan – cut into 12 bars and place on a wire rack set over a piece of wax paper. Drizzle the melted chocolate over the bars – refrigerate till set. Store the bars in an airtight container in the fridge for up to 1 week or freeze for up to 2 months (let thaw before serving).
