Amaranth, cooked
Pistachio Meats or Berry
Nut Seed Crunch
Tart Dried Cherries
Salad greens: spinach, romaine, kale
Other fresh vegetables: chopped tomatoes, cucumbers, carrots, peppers, etc
Cooked beans-Pinto Beans or Small Red Beans
Salad Dressing
Using a clean mason jar or any jar or container with a lid, layer your favorite salad ingredients for a healthy, portable salad. Start with a layer of salad dressing to keep the other ingredients from getting soggy. Next, add a protein rich layer or beans or cooked quinoa or kaniwa. Layer your favorite chopped vegetables next. Top with nuts, dried fruits or seeds. Top with your favorite salad greens. Close the lid and refrigerate until you are ready to eat. Eat in the jar or empty onto a plate or bowl.
