Pistachio & Cranberry Salad with Raspberry Shrub Dressing

Ingredients
5oz Arugula
3/4 cup OliveNation pistachio meats
1 pear sliced thin
Optional: fresh Parmesan
Dressing:
1/2 tsp Dijon mustard
1/4 tsp black pepper
1/2 tsp salt
1/4 cup olive oil
Method
In a measuring cup, combine the raspberry shrub, Dijon, mustard, salt, pepper, and olive oil. Stir well until combined. In a large bowl, combine arugula, pistachio dried cranberries, and the sliced pears. Poor the dressing into the large bowl of salad ingredients. Stir everything until evenly coated. Serve as is or with fresh Parmesan cheese on top.
