Lime Angel Food Cake

Ingredients

1 cup cold water

1/4 cup fresh lime juice, divided

1 tablespoon lime zest, plus extra for garnish

1 cup confectioner’s sugar


Method

Pre-heat the oven to 360 degrees. In a large bowl fitted with a whisk attachment add the cake mix, cold water and 2 tablespoons of the lime juice. Beat on low till the ingredients are combined then increase the speed to medium-high, beating till glossy, voluminous and forms soft peaks. Gently fold in the lime zest. Pour into an ungreased angel food cake or tube pan. Bake for 23 – 28 minutes or till golden brown, the top springs back and a toothpick comes out clean. Immediately invert the pan – if using a tube pan (without the traditional “feet” of an angel food cake pan), place over a narrow-necked bottle. Cool completely. Run a thin knife around the edges and center tube of the pan to release the cake. Place on a wire rack set over a piece of waxed paper. In a small bowl combine the confectioner’s sugar with 1 tbsp of lime juice. Whisk, adding more lime juice a bit at a time if needed, till a smooth glaze is achieved. Pour the glaze over the top of the cake, using a small angled spatula to spread evenly. Let set completely. Garnish with lime zest if desired, and serve – slice with a serrated knife for the neatest cuts.
