Chocolate Chip Coconut Flour Muffins

Ingredients:

12 tsp salt
12 tsp baking soda
6 eggs
1/3 cup honey
1/3 cup canola oil
2 tsp http://www.olivenation.com/Pure-Vanilla-Extract-P85.Pure Vanilla Extract by OliveNation
12 cup http://www.olivenation.com/Semi-Sweet-Dark-Chocolate-Chunks-Chips-P7423.Barry Callebaut Semi-Sweet
Dark Chocolate Chips
Pre-heat oven to 350F.
Line a 12-cup muffin pan with baking cups or use an unlined silicone muffin pan (baker note: coconut flour tends to stick). Mix coconut flour, salt, and baking soda together with a whisk in a small bowl. Use a whisk or hand mixer to combine eggs, honey, canola oil and vanilla extract in a large bowl. Be sure the wet ingredients are well incorporated. Add dry ingredients to wet ingredients and mix well with a hand mixer or whisk. Fold chocolate chips into batter. Divide batter evenly in the muffin pan. Bake for 25 minutes. Muffins are ready when a toothpick inserted into one comes out clean.
