Ingredients
12 tablespoons unsalted butter, melted and cooled slightly
1 cup granulated sugar
1/4 cup brown sugar
2 large eggs, at room temperature
2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon kosher salt
Directions
Pre-heat the oven to 350 degrees; line 3 baking sheets with parchment paper.
Beat the melted butter, both sugars and vanilla in a large bowl. Add the eggs and beat again. Add the flour, baking soda, baking powder and salt and beat till just combined. Add the black cocoa powder and beat till just combined.
Pour the sprinkles into 2 bowls.
Use a cookie scoop or tablespoon to drop mounds of the dough onto one of your baking sheets (the scoops can be close together at this point). Working with one scoop at a time, roll into a ball and roll the ball into one of the bowls of sprinkles. Return to your baking sheet. Repeat with the remaining scoops.
Divide the scoops between your 3 baking sheets, spacing them evenly apart as they will spread in the oven. Bake one sheet at a time for 10 – 12 minutes. Remove from the oven and transfer to a wire rack to cool completely. Repeat with the remaining cookies.
