Sour Cream Pasta

Ingredients

10 oz penne pasta

1 1/2 cups cooked chicken

1 cup sour cream 

1 1/2 cup chicken stock 

3 tbsp butter 

2 tbsp flour

2 cups baby spinach 

1 tbsp minced garlic 

1/2 tbsp Italian seasoning 

3/4 tsp salt 

1/4 tsp black pepper 

3/4 cup mozzarella cheese 


Directions

In a measuring cup, whisk together sour cream, flour and 1/4 cup chicken broth. Set aside. In a large pan on medium, melt butter. Then add garlic and shallots. Let cook while stirring for one minute. Then add seasonings and spinach. Cook for about one minute until the spinach begins to wilt. Next add chicken broth. Whisk in the sour cream mixture. Allow this to cook for 1-3 minutes while the sauce thickens. Then add in mozzarella cheese. Stir this well until creamy. Then add in the cooked chicken and the cooked pasta. Stir well and serve!
