Rum Balls

3 cups vanilla wafers, broken in food processor until crumbs
1/2 cup pecans, ground in food processor
3 tablespoons OliveNation cocoa
1 cup confectioners' sugar
3 tablespoons light corn syrup
1/3 cup water
2 teaspoons pure rum flavor
1/4 cup confectioners sugar
Combine vanilla wafers, pecans, cocoa, 1 cup confectioners' sugar, corn syrup, water, and rum flavor together. Roll into 1 inch balls, and then roll in remaining confectioners' sugar. Covered and store for one week before serving to let the flavors mellow.
