Ginger Lemon Shrub Cocktail

Ingredients

1 lemon, halved

10 – 12 mint leaves

1 ounce simple syrup, optional

4 ounces bourbon

Club soda, optional


Directions

Sprinkle the finishing sugar on a plate or shallow dish. Juice one of the lemon halves – you should have at least 2 tablespoons of juice. Cut the other half into wedges, reserving one wedge. Coat the rims of 2 glasses with the lemon wedge and dip into the finishing sugar. Set aside. Place the 2 tablespoons of lemon juice, mint leaves and simple syrup (if using) in a shaker. Gently muddle. Add the bourbon and shrub, fill with ice and shake vigorously. Fill your prepared glasses with ice and divide the cocktail between them. Top with club soda, if using, and garnish with the crystallized ginger and lemon peels. Serve immediately.
