Fruit Gummies

6 Tablespoons unflavored gelatin

1 1/2 cups cold water

2 1/4 cups boiling water

6 cups of sugar, plus extra for coating

Extracts and flavoring oil

Food coloring


Line 2 8x8 pans or other rectangular shaped pans with plastic wrap and spray with cooking spray. Sprinkle gelatin over the cold water in a 6 qt. pot. Let sit for 5 minutes, then add the boiling water and stir until gelatin dissolves. Stir in sugar. Bring to a boil over medium high heat. Simmer gently for 25 minutes, stirring constantly. Remove from heat. Divide amongst several mixing bowls. Add liquid color and extract and oils to color and flavor accordingly. Pour mixtures into prepared pans. Cover with plastic wrap. Chill for at least 4 hours or overnight. Lift plastic and peel off candy onto a cutting board sprinkled with sugar. Coat a sharp knife or pizza cutter with cooking spray and cut into 1/2" cubes. Roll in sugar. Leave gummies on parchment, foil or waxed paper at room temp for 1-2 days to crystallize. Store in an airtight container for up to 3 weeks.
